Why don't you add vinegar to fried carrots?

I read that the recipe I bought last time said, don’t add vinegar to the carrot, why?

    The best nutrient in carrots is carotene. After the human body ingests carotene, it can be converted into vitamin A. Vitamin A is a key nutrient for protecting eyesight, keeping skin moist and preventing aging. But carotene is afraid of acetic acid, because acetic acid will decompose carotene, and put vinegar in heating, will accelerate the decomposition of carotene.
