In fact, MSG is similar to salt. MSG is sodium glutamate, which is harmless to the body. Sodium glutamate is a sodium salt of the amino acid glutamic acid. It is an odorless, colorless crystal that disintegrates and melts at 232°C. Sodium glutamate has good water solubility, and can dissolve 74 grams of sodium glutamate in 100 ml of water. MSG is a widely used seasoning. It can be decomposed into glutamic acid and tyrosine after ingestion, which is beneficial to human health.
