Can I use tap water to cook rice?

Male  32 years old 2018-06-30
Some people say that it is best to use pure water when cooking rice, making tea, or making mung bean soup. The tap water contains alkali, and eating more is bad for the body. Is there any basis for this statement?

Alkali is the natural enemy of many nutrients, such as vitamin C, vitamin B1, vitamin B2, vitamin D and so on. In addition, polyphenols such as flavonoids, tea polyphenols and anthocyanins will change their structure under alkaline conditions and their antioxidant activity will decrease. The tap water in many areas in the north usually shows weak alkalinity, so it is best to use pure water when making tea or boiling mung bean soup, which can better ensure the activity of antioxidant substances. In addition, if you want to protect nutrition, adding noodles, porridge, stew and adding alkali is not a wise choice.
