Today, when I saw spinach, I wanted to make a vegetable salad, but my sister said that spinach should not be eaten raw. Why can't spinach be eaten raw?

Spinach contains oxalic acid, which will be volatilized after heating. If eaten raw, oxalic acid will combine with calcium in the intestine to form calcium oxalate which is difficult to absorb, which interferes with the body's absorption of calcium. Therefore, even cold spinach should be boiled with boiling water to remove most of the oxalic acid.
