My dad likes to add a lot of MSG when he cooks. It is said on the Internet that it is not good to eat too much MSG. How should MSG be used correctly?

    When monosodium glutamate is used at a high temperature above 100°C, the umami agent sodium glutamate will be transformed into sodium pyroglutamate which is carcinogenic to the human body. Since the oil temperature during cooking is generally 150°C-200°C, which will turn MSG into toxic sodium pyroglutamate, the cooking of "semi-finished" side dishes with MSG should be steamed or boiled. And if in an alkaline environment, MSG will react chemically to produce a substance called disodium glutamate. Therefore, it should be properly used and stored.
