Why is milk bitter?

    The bitterness of milk often occurs in milk in bags and boxes. During storage, a small part of the inactivated proteolytic enzymes may slowly recover the original protein structure. Once the structure is restored, their activity will be revived. The only effect of proteolytic enzymes is to chop the protein in milk into pieces, which is hydrolyzed into peptides. Due to the relatively high hydrophobicity of milk proteins, some peptides have a bitter taste, so bitter milk is formed.
