An American Nutrition Society spokesperson said that 8 dried apricots contain 2 grams of dietary fiber and 325 milligrams of potassium, and only 3 milligrams of sodium. These all help prevent the accumulation of minerals in the urine to form calcium oxalate stones, the most common of which is kidney stones.7
