The leftovers from last night, after eating hot this morning, tasted a bit saltier than yesterday, is it because the nitrite is produced in the leftovers?

    The leftovers are hotter and saltier, mainly because the freshly cooked dishes have a lot of salt in the soup, and left overnight to allow the salt to penetrate into the dishes more, making the salty taste worse. When it is heated again, the water evaporates and the concentration of the soup increases. The high-concentration salt soup attaches to the dish, making it more salty.
