    Adding a little salt when blazing can prevent the loss of nutrients. During the vegetable blanching process, the vitamin C and B vitamins will be lost into the pot. Add a small amount of common salt in boiling water to make it close to the solution of physiological saline. Vegetables are in a relatively balanced concentration environment inside and outside the cell, and the speed at which their soluble components diffuse into the water will slow down.
