When I fry string beans, sometimes they are not fully cooked for the fresh color. Can the string beans be eaten if they are not cooked?

The reason why green beans are susceptible to poisoning is related to the two elements contained in green beans-saponin and hemagglutinin. Saponin has a strong stimulating effect on the gastric mucosa and can cause gastrointestinal symptoms such as vomiting and diarrhea; hemagglutinin can destroy the oxygen-carrying function of red blood cells, causing red blood cell agglutination to cause poisoning. But when the temperature reaches 100 degrees, these two toxic substances will be destroyed, so you must not be greedy when cooking green beans.
