It is said that β-carotene needs fat to be absorbed. Should carrots be fried in oil?

    Some researchers have indicated that the amount of dietary fat (3g and 36g) does not affect the response level of plasma β-carotene when eating meals rich in β-carotene. Cooking carrots doesn't have to be oily and meaty, just a small amount of oil or fat ingested in the same meal.
