After I blanched the vegetables, I always use cold water to cool down. Will this cause nutrient loss?

The cooling of boiled vegetables in cold water will not lead to the loss of nutrients, but the temperature of boiled vegetables is relatively high. After being removed from the water, it will contact with the oxygen in the air to produce thermal oxidation, resulting in the loss of nutrients, especially for green leafy vegetables. It is more obvious, at this time, cold water cooling is more able to retain nutrition.
