    The overnight vegetables are placed in an open environment above 30 degrees Celsius for 48 hours. The nitrite content will indeed increase to a certain extent, but the final value is within the safe range; if stored in the refrigerator for 48 hours, the nitrite content increases very little. Experts also reminded that if you want to eat overnight dishes, you should pay attention to the leftovers in a plastic wrap and storage box and put them in the refrigerator for storage.
