Recently, I read news that acrylamide is said to be a carcinogen. How is acrylamide produced?

    Acrylamide is indeed a carcinogen, mainly formed during the heating (above 120°C) of plant foods with high carbohydrates and low protein. The main precursors of acrylamide are free aspartic acid (representative amino acids in potatoes and cereals) and reducing sugars, which undergo Maillard reaction to form acrylamide.
