    Although the roots of cassava are rich in starch, all parts of the whole plant, including roots, stems and leaves, contain toxic substances, and fresh roots are more toxic. Therefore, we must pay attention to when eating cassava roots. The toxic substance contained in cassava is linseedrin. If you eat raw or undercooked cassava or drink its soup, it may cause poisoning. The reason is that linseedrin or linseedrinase produces free hydrocyanic acid after hydrolysis by gastric acid, thereby poisoning the human body.
