Can't fish food be heated for too long?

I heard that fish food cannot be heated for too long. Why is this statement?

    Excessively high temperature will produce harmful substances. Fish, meat and other foods rich in protein will produce carcinogens-heterocyclic amines when heated above 200 ℃. Heterocyclic amine compounds have strong carcinogenicity and gene mutation. In general, the higher the heating temperature, the longer the time, and the less the moisture content of the food, the more heterocyclic amines are produced.
