The Laba garlic was marinated half a month ago. Today, when I open it, it turns green. Why does this color turn green?

    Pickling Laba garlic requires vinegar, so the reason why Laba garlic turns green is that in an acidic environment, some of the sulfur-containing substances in garlic undergo structural changes under the action of garlic enzymes, producing two blue and yellow sulfur-containing pigments. The superposition of these two pigments is green.
