    The phytic acid contained in whole grains will affect the body's absorption of various minerals. Whole grains such as brown rice, wheat, rye, oats, barley, sorghum and millet will increase the activity level of phytase after germination, thus effectively reducing the phytic acid content. At the same time, the germination process breaks down some of the starch contained in the grains, as well as some dietary fiber such as ß-glucan and arabinoxylan. The sugars and amino acids produced after decomposition have certain prebiotic effects, and may have health benefits such as improving the composition of intestinal flora, promoting digestive system and metabolic health, and improving blood sugar control.
