Why is salted fish carcinogenic?

My mother wouldn’t let me eat salted fish. Why can salted fish, especially Chinese salted fish, be carcinogenic?

    It is speculated that salted fish is the product of fish marinated with high concentration of salt. Chinese salted fish has a dehydration step, and some nitroso compounds will be generated in this process. These nitroso compounds, such as nitrosodimethylamine, have shown carcinogenicity in in vitro experiments.
