Why must beans and mushrooms be cooked?

I usually like to eat raw vegetables, because I think this is more nutritious, why should beans and fungi be cooked?

    Because these two kinds of vegetables are safer when they are cooked, fresh beans and vegetables such as edamame and green beans. They contain substances such as trypsin inhibitors, saponins, phytohemagglutinins, which not only hinder the digestion of proteins, but can also cause food poisoning. Flammulina velutipes, Shiitake, Pleurotus ostreatus and other fungi grow in a dark environment, are easily contaminated by microorganisms, are not cleaned, and eating directly raw can easily cause food poisoning.
