    The water content of vegetables is mostly above 90% its protein content is lower than 3% and its fat content is lower than 1%. Vegetables contain almost all vitamins except vitamin D and vitamin B12, especially rich in vitamin C and carotene, but the content of B vitamins is not very high. In addition, the content of vitamin K in green leafy vegetables is very high, and its content is positively correlated with the shade of green.
