    Shark fin is the most susceptible food. The reason why shark fin contains a lot of mercury is mainly from the pollution of shark living environment-seawater. Experiments have shown that mercury in water is easily converted into methylmercury with high absorption rate, strong toxicity and easily soluble in water under the action of microorganisms. Methylmercury can quickly diffuse in water and accumulate in stages in aquatic organisms, and sharks are at the highest level of the food chain, so methylmercury will eventually accumulate in large amounts in its body.
