My mother-in-law boiled chicken soup for me every day. She said that drinking soup is particularly nutritious, but others said that drinking soup is useless. Is the nutrition of chicken soup in the soup or in the meat?

    In fact, regardless of chicken soup, broth or fish soup, the protein content of the soup is far less than the meat itself. Meat is made up of muscle fibers, among which are soluble sarcoplasmic proteins, amino acids, peptides, etc. They easily enter the soup, but most of the muscle fiber components are difficult to dissolve. Generally speaking, the protein content in broth and chicken broth is only 1%~2%, compared with the meat block of 15%~20% obviously the protein content is much lower. The calcium and iron elements in bones are insoluble ingredients, so it is impossible to dissolve a lot of calcium and iron in the soup. Only the soluble ingredients such as potassium can enter the soup.
