Can fried potatoes and vinegar prevent nutrient loss?

I like to add a few drops of vinegar every time I fry potatoes. I heard that this prevents nutrient loss, is it true?

    Add some vinegar to the fried potato shreds, fried bean sprouts, and fried lotus root slices to make the dishes crisp and tender. Because vinegar protects the cell walls of vegetable plant cells and keeps them strong. But don't put vinegar when frying green vegetables such as canola and pakchoi.
