I always thought that the nutrition made by soybeans and soybean sprouts is the same. Today I learned that soybeans sprouts are more nutritious. What is the difference between them?

During the soaking process, under the action of its own enzymes, the mineral elements released can be well absorbed and utilized by the human body to play a nutritional role, and the content of carotene, vitamin B2, niacin, and folic acid also doubled. Compared to soybeans, the nutrients absorbed are limited by trypsin inhibitors and oligosaccharides, and cannot be fully utilized. So it is best to eat soy products made from soy beans in order to play a better role.
