What happens when I use too much salt or too early when cooking?

When I cook, I usually add salt when the food is sautéing. Generally, I put less salt. What happens if I use too much salt or prematurely when cooking?

    When cooking, excessive salt use and premature use are not good. If you use too much salt or use salt too early, it will cause the juice in the vegetables to flow out too much, not only the loss of nutrients, but also the dishes will collapse and lose their crisp and tender taste.
