Can potatoes' carbohydrates be absorbed?

I often feel dizzy and look yellow, and then I know that I lack carbohydrates. The doctor told me to eat more potatoes every day. Can the carbohydrates inside be absorbed?

    Potatoes are very high in starch and carbohydrates and can supplement energy.
