Every time I make some green leafy vegetables, such as spinach, I like to add a lot of vinegar. Can I add more vinegar to the green leafy vegetables?

Add as little vinegar to leafy greens as possible. Vinegar cannot be cooked in green leafy vegetables, otherwise the rich magnesium in chlorophyll in green leafy vegetables will be replaced by hydrogen in acetic acid and lost, so that the chlorophyll becomes pheophytin and the color will become yellowish brown and ugly, affecting appetite .
