The sister-in-law said that the fruits contain procyanidins and other polyphenols, which can resist oxidation, is this true?

Fruits can resist oxidation because in addition to basic nutrients such as vitamin C, fruits also provide another class of beneficial substances-polyphenols, especially proanthocyanidins. They are originally plant pigments, but they have a strong antioxidant effect when they enter the body.
