Can kimchi pickled for only a few days?

My mother just marinated some kimchi, and I wanted to get it out and started eating it. My mother refused to say that it was bad for my health. Can't I eat kimchi that has been pickled for a few days?

    The main problem in pickled vegetables is the content of nitrite, and the problem of nitrite can be degraded to a safe value between two weeks and one month of pickling vegetables. The kind of kimchi that is eaten for only a few days is of course unhealthy.
