I usually eat preserved foods such as corned beef, but my grandmother always makes me eat less. Why should I eat less preserved foods?

Because there is nitrosamine in the preserved food. "Poisonous salt" is nitrosamines. It is mainly found in cured meat, especially smoked meat after curing. Its harmfulness and carcinogenicity are relatively stronger, so we still try to preserve these preserved foods. Eat less or not.
