    Organic acids can weaken the heat resistance of microorganisms, and can inhibit their growth and reproduction. Organic acids can hydrolyze sucrose and pectin substances, and also affect the stability and gel properties of pectin. Organic acids are related to the stability of anthocyanins, chlorophyll, and ascorbic acid in fruits and vegetables. Under acidic conditions, the activity of enzymes involved in enzymatic browning decreases, and oxygen is more difficult than water in acid solutions, so organic acids are used as color protectants.
