Why does the color change after the snowdrops are cut?

Female  37 years old 2018-04-15
I bought two snow lotus fruits today, cut them and didn't eat them, and they turned brown after a while. What's going on?

Snow lotus fruit contains a chemical component, tannin, also known as tannin. After the snowdrops are cut and peeled, they will turn brown when exposed to air. The reason for the discoloration is that due to oxidation, the quinone-producing polymers in tannin form brown pigment, also known as melanin. In order to prevent discoloration, the peeled and cut snow lotus fruit can be soaked in clean water to isolate it from the air to prevent oxidative discoloration.
