Why do vegetables have anti-cancer effects?

I often hear that if you want to eat more vegetables to prevent cancer, why can eating vegetables play an anti-cancer role?

    Eating more vegetables can prevent cancer. Vegetables, especially cruciferous vegetables such as cauliflower and cabbage, contain a variety of anti-cancer components (such as indole compounds), which can inhibit the carcinogenic effects of chemicals by inducing liver detoxification enzyme activity.
