    Try to finish cooking as much as possible, because leftovers are prone to nitrite, which is bad for your health. If you really can’t finish it, you should store it properly and minimize the production of nitrite. First, store it at a low temperature. Try not to flip the vegetables in the refrigerator. Secondly, keep it sealed and minimize the storage time. Try to boil the water before the vegetables are fried. This will greatly reduce the nitrate and nitrite content of the vegetables. Keep it in the refrigerator without fear of exceeding the nitrite standard.
